I processi di trattamento delle barbabietole si differenziano a seconda della tipologia, in quelle destinate all'alimentazione si hanno i classici trattamenti degli ortaggi, invece per le barbabietole da zucchero ci sono processi più complessi.

Le barbabietole vengono portate direttamente in zuccherificio, essendo impossibile lo stoccaggio; successivamente le radici vengono pulite e trinciate e si ha l'estrazione dello zucchero attraverso la diffusione, ovvero si getta acqua in senso contrario alle barbabietole. Infine si ha la concentrazione del sugo zuccherino, ottenendo cristalli solidi di zucchero greggio, che vengono depurati.

The beets are taken directly to the factory, it is impossible to storage; then the roots are cleaned and chopped, there is the sugar extraction by diffusion, by water that flows in the opposite direction to the beets. Finally there is the concentration of the sugar juice, obtaining solid crystals of raw sugar, which are purified.
