Secondo gli antichi greci e romani, le barbabietole valgono il loro peso in argento. Nella mitologia greca, venivano offerte delle barbabietole al dio Apollo, il dio del sole, della luce, della musica, ma anche della medicina e del benessere; infatti alle barbabietole venivano attribuite delle proprietà afrodisiache e curative.
