Ricetta molto antica, che risale all'antica Roma. Consiste in barbabietole bollite con mostarda; le barbabietole vengono bollite, pelate e tagliate, poi vengono servite coperte con una salsa fatta con la mostarda, olio d'oliva e aceto.
